Preheat oven to 350°F degrees. Lightly grease 6 muffin cups with 1 tsp of coconut oil. Set aside.
Heat a large skillet over medium heat. Melt 1 tsp of coconut oil. Add ground turkey to the pan and cook until brown. Drain and set aside.
Whisk the eggs in a bowl with sea salt and black pepper.
Place kale, green onions, and turkey into each tin. Pour the egg mixture on top, leaving 1/4 inch from the top.
Place in oven and bake for 20 minutes, or until a toothpick comes out clean. Remove from oven. Use a butter knife to go around the edges and pop out the egg cups. ENJOY!
