GREEK MEATBALLS WITH TZATZIKI SAUCE

INGREDIENTS:
Meatballs
 1 tbsp extra virgin olive oil
 1 lb ground beef (or lamb)
 1 lb ground pork
 1 red onion, diced
 ½ cup rolled oats
 1 egg
 ¼ cup fresh parsley, finely chopped
 ½ tsp oregano, dried
 2 cloves garlic, minced
 ¼ tsp black pepper
 1 dash sea salt
Tzatziki Sauce
 1 1/2 cups plain Greek yogurt
 1 large cucumber, peeled and grated
 2 tbsp fresh dill, chopped
 2 cloves garlic, minced
 1 tbsp fresh lemon juice
 ½ tsp sea salt (plus more to taste)
DIRECTIONS:

Preheat oven to 425 degrees and drizzle a baking sheet pan with extra virgin olive oil. Add all remaining meatball ingredients to a large mixing bowl. Use your hands to mix everything until well combined.

Using a cookie dough scoop, scoop the meatballs and then roll them in between the palm of your hands. Place them on the baking sheet pan and bake them for 25-30 minutes until the meatballs have cooked all the way through.

While the meatballs are cooking, it's time to make the tzatziki sauce. Start by draining the grated cucumber by putting it in a clean dish towel or cheesecloth and squeezing it tightly until all the moisture is out.

Add all tzatziki ingredients to a large mixing bowl and mix until everything is well combined.

Allow the mixture to rest for a few minutes until the flavors meld together. Taste test to see if you need to add any extra herbs, lemon juice, or salt.

When the meatballs are done, let them cool slightly and then serve with the tzatziki sauce or place in an air-tight container and store in the refrigerator for up to 4 days. ENJOY!
