ARCTIC CHAR WITH ORANGE-CAPER RELISH
1 cup orange sections
2 tbsp red onion, slivered
1 tbsp fresh flat-leaf parsley, chopped
1 tbsp capers, minced
1 tsp orange rind, grated
1 tbsp fresh orange juice
1 tbsp extra-virgin olive oil
1 tsp rice vinegar
1 dash ground red pepper
4 (6-ounce) arctic char fillets
½ tsp sea salt
½ tsp freshly ground black pepper
Combine the first 9 ingredients in a small bowl; toss gently to combine.
Cut sections of orange over a bowl to catch the juice that will be combined with relish. Cover and chill until ready to serve.
Heat a large heavy skillet over medium-high heat. Sprinkle fish with salt and pepper. Coat pan with olive oil.
Add fish to pan; cook 4 minutes on each side or until the desired degree of doneness.
Place 1 fillet on each of 4 plates; top each serving with about ¼ cup relish.
